Ingredients:

4 ea. Brandt House Prime Beef Top Sirloin steaks, 6ozs.

2-3 ea. Oranges
|
11/2 tsp Natural Pak Ground Cumin
|
1 tsp Salt
|
½ tsp Natural Pak Pepper
|
7 ozs. Family Tradition Roasted Red Pepper, diced
|
1/3 C Kalamata olives, pitted, coarsely chopped
|
1/3 C Red Onion, diced
|
Instructions:

Grate 2 tsp. orange peel from oranges; reserve oranges.
|
Combine orange peel, cumin, and salt in small bowl - reserve 2 tsp for relish
|
Add black pepper to the orange peel seasoning blend - mix well
|
Press peppered seasoning blend evenly onto steaks, set aside for searing
|
Peel and dice reserved oranges to measure 11/2 C.
|
Combine diced oranges, red pepper, olives, onion and 2 tsp. seasoning in medium bowl; mix well; chill
|
Heat sauté pan over medium high flame
|
Sear the steaks cooking approximately 5-6 minutes per side to reach medium rare
|
Serve the steaks with the relish
|
Garnish with orange slices and Kalamata olives |
