Ingredients:

4 pcs. Fresh Airline Chicken Breast
|
¼ cup Fresh Rosemary, chopped
|
¼ cup Fresh Thyme, chopped
|
4 each Large Shallots, peeled, whole
|
To Taste Kosher Salt
|
To Taste Fresh Ground Pepper
|
Instructions:

|
Place shallots in small baking dish and toss with olive oil. Season with salt and pepper.
|
Bake in preheated 325*F oven until the shallots are lightly browned and soft, about 1 hour.
|
Remove shallots to mixing bowl and mash, add the chopped herbs and mash until paste.
|
Season with additional salt and pepper.

Season the underside of the chicken breast with salt and pepper.
|
Lift the skin up and spread herb paste on the meat, coating it well.
|
Additional herb paste can be spread on the skin.
|
Place on a rack on a baking dish in a preheated 425*F oven for approximately 30-45 minutes.
|
Let rest 5 minutes prior to serving.
